contrast

n. ~ The relative difference between the lightest and darkest areas of an image.

Notes: 

High-contrast images have a significant difference between the highlights and shadows, often having very few midtones. Low-contrast images have relatively less difference between the highlights and shadows, often lacking a pure white or pure black. Contrast is sometimes expressed as a ratio of the lightest and darkest areas of an image, as measured by a densitometer.
