flaking

n. ~ A process of deterioration resulting in the loss of small, flat pieces from a surface.

Notes: 

Flaking may be observed on older magnetic media in which the oxide coating is separating from the base. It may also be seen in art papers and coated cloth. Flaking is sometimes used synonymously with peeling, although it is generally used to describe a condition that is more localized than peeling.
